Fruit Salad in a Melon Bowl

One of the greatest things about summer is the assortment of sweet fruit! We like to put this treat together for those long evenings sitting by the fire pit, long after the grill has cooled.

Here's what you do:

  • Get a nice ripe seedless watermelon and slice it in half. If you use an oblong shaped melon, slice it lengthwise to create an oval shaped bowl. 
  • Using a small melon balling utensil, or a teaspoon, start scooping out the pink flesh into nice bite sized pieces. Set them aside in a separate bowl. You'll probably end up with more melon bites than you can use, but there's stuff you can do with the leftover.
  • Also, as you scrape, you'll be releasing lots of juice. Drain it off into another container. There's stuff you can do with that too.

  • Once you've got all of the edible melon scooped out, scrape out the inside and wash the outside, to clean it up. There you have a melon bowl!

  • You can add more types of melon now if you like. Cantaloupe and Honeydew are all delicious together!
  • Next choose your a couple of your favorite summer berries, and mix them into your melon bites. Mine has blackberries and sliced strawberries. Blueberries are amazing in this mix as well, but they're a little more pricey than the others.
  • You can sprinkle a tiny bit of sugar into the mix, if you like, but you don't need it, unless any of your fruit is a bit under-ripe.
  • Once it's mixed up nicely, pour it into the melon bowl, and chill... or eat it right away. Your choice! 

Now if you're using a large, oblong watermelon, a neat thing to do is to cut out the top left quarter, and the top right quarter, leaving a thin strip down the top center.  Once you scoop it all out, you have a basket that's great for serving at a summer party.

Now, you're wondering what to do with that juice and leftover watermelon flesh.

  • I pour the sweet juice into ice cube trays and freeze. They're great for adding to a glass of lemonade for the kids.
  • I puree the remaining fruit flesh and freeze that as well. I use these to make frozen drinks for the grown ups. I just plop them into the blender with some lemonade and a shot or two of watermelon flavored rum (or vodka).
